Is there a way to determine if a specific piece has been captured? I want to be able to resurrect pieces but only if they've already been eliminated. The pieces-remaining command would have been ideal for this, but it seems that only works for an end-game goal.

I'd simply like to say something like "if queen has been captured then add queen."

One way to do this is by using dummy off board positions as a way of tracking captured pieces. When a piece is captured it is also created on one of these positions. Later, you can test these positions to determine what has already been captured. If someone knows of a simpler approach, please chime in
